Pugliese rooftop terrace with artichokes and tomatoes drying on woven mats, late afternoon
Place
All three patès in this set come from Puglia, at the heel of Italy, where the growing season is long and dry.
The region's climate concentrates everything: the olives, the artichokes, the tomatoes.
The same plateau produces all three.
Three jars of artichoke, olive, and tomato pate on a worn wooden table
Process
Each patè is pressed from its primary ingredient with extra virgin olive oil and aromatics, then hand-jarred without cooking.
The artichoke and sun-dried tomato patès run at 58 and 59 percent primary ingredient.
The black olive patè runs at ninety percent.
Weathered hands arranging three filled pate jars on a wooden board
People
All three come from the same family we work with in Puglia, who grow the vegetables and run the bottling on the same property.
The set is our way of introducing the range to a new pantry.
We visit once a year to select the season's batch.

Questions

  • What is in the set?
Three jars: artichoke pate, black olive pate, and sun-dried tomato pate. One of each.
  • How long do they keep once opened?
Refrigerate after opening each jar. Cover the surface with a thin layer of oil. Each pate keeps for about 2 weeks in the fridge.
  • Which jar should I open first?
There is no strict order. If you are pacing yourself, the artichoke and olive pates are the best starting points on bread. The sun-dried tomato pate is the most versatile one for cooking.
  • Is everything vegan?
The artichoke and olive pates are fully vegan. The sun-dried tomato pate contains a small amount of sugar but no dairy or animal products.
  • Can I give this as a gift?
Yes. It ships well and holds at room temperature until opened.
  • How is this shipped?
From our New York warehouse. In-stock orders ship within 1-2 business days. Free shipping over $75.
  • What if it arrives damaged or I don't love it?
Write to us. We refund within 60 days, no questions asked.
  • How do I know these are really from Puglia?
All three come from the same family we work with in Puglia. We visit once a year to select the season's batch.

Good pack

All three are quality. The olive pate is the most intense, the artichoke the most subtle, the tomato somewhere in between. If you are new to Gusta this is the right place to start.

Entertaining essential

Host a dinner every month. This pack is now a standing item for the pre-dinner spread. All three pates together on a board with a good bread is a full appetizer situation that I can put out in five minutes.

discovered my favorite by trying all three

the variety pack is exactly what it should be: a way to find out which one you love. for me it was the sun-dried tomato. ordered two full jars of just that one after finishing this pack

Perfect antipasto night

Opened all three jars on a Friday with a board of cheese, bread, and cured meat. The black olive pate was the first to go. The sun-dried tomato pate on bruschetta was the hit of the night. The artichoke held up beautifully on cracker with a little aged cheese. An entire evening from three jars.

Best housewarming gift

I gave this to a couple who just moved. They texted me a photo of their first dinner in the new apartment: bread, cheese, wine, and all three of these pates on a cutting board. Job done.

Three great pates

All three are genuinely excellent. The artichoke pate is the sleeper of the three. It goes on everything. Sandwiches, pizza, pasta. Very versatile. Ordering separately now.

Six Italian regions. Nothing reformulated. Imported direct.
