- Place
- Puglia sits at the heel of Italy, where the land runs flat and the growing season is long and dry.
The soil here is thin, pale limestone, and what little rain falls comes in winter.
Artichokes grown in this heat concentrate their flavor before the harvest. - Process
- The artichokes are pressed with extra virgin olive oil, parsley, garlic, and mint into a smooth spread.
Fifty-eight percent of what is in the jar is artichoke.
No cooking, no enriched oil, no thickeners. - People
- We work with the family in Puglia that grows the artichokes and runs the pressing and bottling.
They have tended this land for decades, and the same hands that harvest fill the jars.
We visit and taste from the season's batch.

Questions
-
How long does it keep once opened?
Refrigerate after opening. Cover the surface with a thin layer of oil to keep air out. It stays good for about 2 weeks. -
Does it need to be refrigerated before opening?
No. Store unopened jars in a cool, dry place away from direct sunlight. Refrigerate only once you break the seal. -
What do I do with the oil left in the jar?
Use it. It carries the flavor of the artichokes, parsley, garlic, and mint. Good for dressing, dipping bread, or stirring into pasta water. -
Is it vegan?
Yes. Artichokes, olive oil, parsley, garlic, mint, salt. Nothing else. -
How salty is it?
It is seasoned, not heavy. A tablespoon on toast or thinned into a sauce with pasta water is the right amount. -
Can I cook with it or is it just a spread?
Both. Stir a tablespoon into hot pasta with a splash of pasta water. Spoon it onto burrata or fresh ricotta. Serve alongside cheese on a board. -
How is this shipped?
From our New York warehouse. In-stock orders ship within 1-2 business days. Free shipping over $75. -
What if it arrives damaged or I don't love it?
Write to us. We refund within 60 days, no questions asked. -
How do I know this is really from Puglia?
It is made by the family we work with in Puglia, who grow the artichokes and bottle on the same land. We visit each season to select from the batch.
