- Sicily has the volcanic soil, the Mediterranean heat, and the long dry summer that pistachio trees want. The nut that grows here develops more oil and a deeper flavor than pistachios grown in cooler, wetter climates. This is what makes the cream taste distinctly green.

- The pistachios are milled into a smooth cream. Sugar, olive oil, and cocoa butter are blended in to give it spreadable texture and a measured sweetness. No preservatives. No artificial flavors. The cream separates slightly in the jar over weeks, as nut creams do. Stir it back.

- We work with a small family operation in Sicily that takes the pistachio from grove to mill. Single region, direct relationship. We visit once a year.

How to use it

Why isn't it bright green?
Most pistachio products on the market are dyed to get that vivid color. This one isn't. The color you see is the actual color of milled Sicilian pistachios. It varies slightly jar to jar, harvest to harvest. -
Is this the pistachio cream for Dubai chocolate bars?
Yes, this is the filling. Spread it on a sheet of kataifi pastry, fold it into tempered dark chocolate, and chill. The texture and flavor are exactly what the Dubai bar calls for. -
Why is the cream separating in the jar?
The pistachio oils are separating from the solids. It happens in nut creams that don't use emulsifiers to lock the texture permanently. Stir it back together before each use. Nothing is wrong with it. -
How is this different from pistachio butter?
Pistachio butter is pure ground pistachio: unsweetened, grainy, dense. This is a cream: smooth, gently sweetened, blended with olive oil and cocoa butter for a spreadable texture. Different product, different use. -
Is it sweetened?
Yes. Sugar is the first ingredient. This is a dessert cream, not a health spread. If you want pure pistachio with nothing added, that would be pistachio butter. -
How long does it last after opening?
Refrigerate after opening and finish within a few weeks for best texture. Sealed, it keeps at room temperature. -
