- Puglia has grown figs since the Greeks planted the first trees along the Ionian coast. The long, dry summers and limestone-heavy soil suit figs particularly well. The fruit grows large and sugary without irrigation, which is why it needs so little help in the jar.
- Process
- Fresh figs and sugar, cooked until the fruit breaks down and the preserve thickens from the natural pectin in the skins. No added thickener. The batch is filled and sealed while still warm. The seeds stay in.
- People
- The family we work with picks figs in waves across several weeks, because the fruit ripens unevenly on the tree. We source from one harvest. What goes in the jar is what that season produced.

Why does the ingredient list include citric acid?
Citric acid is a natural acid found in citrus fruit. A small amount is added to balance the sweetness of the figs and help hold the color. It is not a preservative. -

Yes. Sugar is the second ingredient after figs. The only sweetener. -
What does the texture look like?
Chunky, with visible fig pieces and small soft seeds throughout. It spreads easily but is not smooth. -
Are the seeds a problem?
They are small and soft. Most people find them unnoticeable. If you prefer a smoother spread, stir the jar well before using. -
What pairs well with fig preserve?
Aged cheeses: pecorino, parmigiano, a sharp manchego. Also good on biscotti, on yogurt, or as a tart filling. -
How long does it keep once opened?
