Ancient Sicilian almond orchard on volcanic terrain, origin of Gusta almond cream
Place
Sicilia grows almonds that are denser and more oily than almonds grown further north. The volcanic soil, the dry season, the salt in the air off the coast: these are not romantic details. They are the conditions that push the nut to store more fat and more flavor. That oil is what makes the cream spreadable and what carries the taste.

Process
The almonds are roasted, then stone-ground into a smooth paste. Cocoa butter and a small amount of sugar go in, along with oil to extend the texture. No preservatives. No artificial flavors. The result is 33% almond by weight, which is higher than most commercial spreads that lead with sugar. It will separate a little in the jar. Stir it before you use it.

People
The family we work with in Sicilia has been making nut creams and pastes for generations, moving from grinding nuts for confectionery to producing finished spreads as home kitchens changed. We visit once a year. The work is still done on stone mills. That is not a marketing claim; it is why the texture is what it is.

Questions

  • Is this vegan or lactose-free?
No to both. It contains milk powder and whey milk powder. If you have a dairy allergy or follow a vegan diet, this is not the right product.
  • Is it gluten-free?
    Yes.
  • Why is the cream separating in the jar?
The almond oils are separating from the solids. It happens with spreads that don't use emulsifiers to lock the texture. Stir it back together before each use.
  • Is it sweetened?
Yes. Sugar is an ingredient. This is a dessert cream, not a health spread.
  • How is this different from almond butter?
Almond butter is pure ground almond: dense, unsweetened, and grainy. This is a cream: smooth, gently sweetened, and blended for a spreadable consistency. Different product, different use.
  • Can I use it in baking?
Yes. It works as a filling in pastries, spread on a tart base, or swirled into cookies before baking.
  • How do I store it?
Store at room temperature, away from direct heat. Refrigerate after opening if your kitchen runs warm, and finish within a few weeks for best texture.
  • How is this shipped?
Ships from the US. In-stock orders go out within 1-2 business days. Free shipping over $75.
  • What if it arrives damaged or I don't love it?
Write to us. We refund within 60 days, no questions.
