Sicilia grows almonds that are denser and more oily than almonds grown further north. The volcanic soil, the dry season, the salt in the air off the coast: these are not romantic details. Process
The almonds are roasted, then stone-ground into a smooth paste. Cocoa butter and a small amount of sugar go in, along with oil to extend the texture. No preservatives. No artificial flavors. The result is 33% almond by weight, which is higher than most commercial spreads that lead with sugar. It will separate a little in the jar. Stir it before you use it.

Dangerous near a spoon

I planned to spread this on toast and somehow ended up eating the first bite directly from the jar. Smooth, deeply almondy, and not cloying. It melts into hot oatmeal beautifully and was also excellent between apple slices for an afternoon snack. My daughter said 'this tastes like the good part of a cookie' and then requested it in her lunch. The jar is not huge, so portion control is currently being enforced by price alone. Really lovely treat and already on the reorder list

A proper nut cream

This is what a nut cream should be. Clean almond flavor, no competing notes, not cloyingly sweet. I have used it in baking, on toast, and on croissants. It works in every context.
