- Puglia sits at the heel of Italy, where summers are long and the heat is intense enough to dry tomatoes in the open air.
The soil is thin and warm, and the tomatoes grown in it are dense and fleshed.
The drying season runs through late summer. - Process
- The tomatoes are sun-dried, then pressed with extra virgin olive oil, wine vinegar, basil, garlic, chili, and oregano into a concentrated spread.
Fifty-nine percent of the jar is tomato.
No cooking after drying, no artificial thickeners. - People
- We work with the family in Puglia that grows the tomatoes and runs the drying and pressing.
The drying happens on the same land the tomatoes grow, and the pressing follows in the same season.
We visit to taste from the batch before each shipment.

How long does it keep once opened?
Refrigerate after opening. Cover the surface with a thin layer of oil. It stays good for about 2 weeks. -

Yes, a small amount. It is in the recipe to balance the acidity of the sun-dried tomatoes and wine vinegar. It is not a sweet spread. -
What does it taste like?
