The soil is thin and warm, and the tomatoes grown in it are dense and fleshed.

Process
The tomatoes are sun-dried, then pressed with extra virgin olive oil, wine vinegar, basil, garlic, chili, and oregano into a concentrated spread.
Fifty-nine percent of the jar is tomato.
