Umbrian wheat field at altitude, late afternoon, dry stone wall along a path. Documentary landscape.
Place
Umbria's altitude and dry air are what durum wheat wants. The grain ripens slowly in the mountain climate, building the density that survives milling and drying. That flavor is still in the pasta when you cook it.
Spaghetti drying on wooden rods inside an Umbrian workshop, side window light, bronze pasta tooling on the workbench. Documentary process.
Process
The wheat is milled into semolina (semola di grano duro). The dough is extruded through a bronze die (trafila al bronzo) that cuts the ridged tube shape and leaves the surface rough. The ridges on penne rigate are functional: they hold sauce on the outside while the hollow center draws it in. No enrichment, no additives. Slow-dried on racks for 24 hours at low temperature.
Two pairs of hands, an older worker and a younger one, shaping semolina on a worn wood bench inside an Umbrian mill. Faces deliberately out of frame.
People
The family we work with in Umbria has held the same process for three generations. Bronze dies. Long drying racks. No accelerated heat. We visit regularly. The relationship is how we verify the pasta is what it says it is.

Questions

  • How do I cook it?
Boil 11 minutes in generously salted water. Finish 1 minute in the sauce with a spoonful of the starchy pasta water.
  • What is the difference between penne and penne rigate?
Rigate means ridged. The ridges grip sauce on the outside, while the hollow tube holds sauce inside. Smooth penne loses both advantages. We only carry rigate.
  • What does slow-dried actually mean?
24 hours on a drying rack at low temperature, versus under an hour at high heat in an industrial dryer. Slow drying preserves the flour's flavor and keeps the pasta's structure stable in the pot.
  • What sauces work best with penne?
Penne rigate handles bold, chunky sauces well. The ridges and the hollow do different work. It pairs equally well with pesto, walnut sauce, and tomato-based sauces.
  • How long does it keep?
Sealed, up to 24 months in a dry pantry. Once opened, use within a few months for best texture.
  • How is this shipped?
From our New York warehouse via Amazon fulfillment. In-stock orders ship in 1-2 business days. Free shipping over $75.
  • What if it arrives damaged, or I don't love it?
Write to us. We refund within 60 days, no questions.

Weeknight hero

Made baked penne on a Wednesday when everyone was cranky. Pasta stayed firm under sauce and cheese instead of collapsing. clean plates all around, which is my metric

Not for everyone at this price

Good pasta but three dollars more than De Cecco which is also very good. Hard to justify that gap regularly.

Great texture, consistent

I've ordered this four times and the quality has been the same every box. That consistency matters when you're cooking for guests regularly.

Not worth the price for me

Its better than De Cecco, sure. But at this price point the delta doesnt justify it for everyday cooking. Im not a pasta connoisseur. 2 stars.

UPDATE: subscribed

First review: liked it. Second review: really liked it. UPDATE: subscribed. The price per box drops enough on subscription to make this my everyday pasta and that is a life improvement I did not expect to have this year.

Not for everyday cooking

At this price I cant use it for Tuesday night pasta. I bought it as a treat. Its good but the price keeps it from being a regular thing for me.

Made my weeknight pasta interesting

I stopped being bored by Tuesday night pasta when I started using this. The sauce situation is genuinely different and the leftover behavior is much better.

My weeknight pasta upgraded

Switched from grocery penne to this about six months ago. Every weeknight pasta dish is better. The sauce coats everything. Leftovers dont fall apart. Kids eat it happily. This is the pasta I will keep buying.

Kids ate EVERY BIT

My kids are pasta picky. They left nothing. First time that has happened in years. Something about the texture or the flavor, I dont know, but it worked.

Overpriced for what it is

I make pasta twice a week. At this price I cant use this as my everyday pasta. Its fine but it isnt THAT much better than De Cecco for the price difference. 2 stars for value.

I am now a pasta person

I never really cared about pasta before. It was a vehicle for sauce. Then I made this and tasted the actual pasta for the first time. The wheaty flavor and the chew are genuinely interesting. I get it now.

Sauce literally clings

The bronze-die surface is not a marketing thing. The sauce actually stays on the pasta. Made vodka sauce with this last week and every piece of penne was coated. No sauce pooling at the bottom of the bowl.

Third box
