- Place
- The pistachios that make this pesto come from the slopes of Mount Etna. The volcanic basalt soil and the dry Mediterranean summer create conditions that produce pistachios with a more intense flavor and a deeper green color than pistachios grown anywhere else in the world. The region has been growing them for over a thousand years.
- Process
- Three ingredients. Pistachios (60%), extra virgin olive oil, and salt. Cold-processed to preserve the oil in the pistachio kernel. No stabilizers, no cashews, no filler. The result is a pesto that tastes like the pistachio itself, not a product that contains some pistachio.
- People
- We found this pesto because we were looking for a single product that could summarize what Sicilian food is: intense, uncompromising, and built around one remarkable ingredient. Three ingredients is the answer to everything that has been added to pistachio products that does not belong there.

Stir into freshly cooked pasta off the heat. Works especially well with rigatoni, penne, and spaghetti. Use 2 tablespoons per 100g of pasta. Also excellent spread on bruschetta, stirred into ricotta as a dip, or as a base for a pistachio cream sauce with pasta and shrimp. Refrigerate after opening and use within 5 days.
The only pistachio pesto on the Gusta shelf with nothing but pistachios, oil, and salt. Three ingredients tastes better than ten.

Questions
-
What are the three ingredients?
Pistachios (60%), extra virgin olive oil, and salt. That is the complete list. -
Where do the pistachios come from?
The pistachios come from the slopes of Mount Etna in Sicily. The volcanic soil and dry Mediterranean climate produce pistachios with a more intense flavor than those grown elsewhere. -
Is it nut-free?
No. It contains pistachios. If you have a nut allergy, this product is not suitable. -
Is it vegan?
Yes. The ingredients are pistachios, extra virgin olive oil, and salt. No dairy, no animal products. -
What pasta shape does it go with?
Rigatoni and penne catch the sauce well. Spaghetti and linguine also work. The pesto is thick, so use a splash of pasta water to loosen it before tossing. -
How long does it last after opening?
Refrigerate after opening and use within 5 days. -
Does it contain gluten?
No. The three ingredients are pistachios, extra virgin olive oil, and salt. None contain gluten. -
Can I use it on bruschetta?
Yes. It works well as a spread on grilled bread, stirred into ricotta as a dip, or as a base for bruschetta with fresh mozzarella.
