- Place
- Toscana has been baking cantucci (biscotti) for centuries. The region's dry climate, reliable wheat, and a tradition built around shelf life shaped a recipe that keeps well and travels far. Every box in this variety pack comes from that same tradition and the same Tuscan bakery.
- Process
- Each flavor in this box uses the same core process: dough mixed with the key ingredient, shaped into a log, baked once, cut into individual pieces, then baked a second time. The double bake is what makes cantucci: low moisture, no preservatives needed, weeks of shelf life. Six flavors, one technique.
- People
- The family we work with in Toscana has been baking cantucci for three generations. Every flavor in this box comes from their bakery: same base dough, same oven, same twice-baking sequence. We have worked with them since Gusta's first order.

Questions
-
Can I dunk these?
Yes. Dip into espresso, hot chocolate, or sweet wine. Hold for 2-3 seconds; eat before it softens past the bite. That is the traditional Tuscan way. -
How long do they keep once opened?
2-3 weeks in an airtight container at room temperature. Avoid the fridge. It introduces moisture and off-flavors. A metal tin holds them better than the resealable bag. -
How long does the sealed bag keep?
Check the best-by date on each box. Typically 6-9 months from production per box. Once opened, keep in an airtight container; 2-3 weeks at their best. -
Which flavors are included, and which contain nuts?
Six boxes: Almond, Pistachio, Chocolate, Cranberry, Ginger and Lemon, and Orange. Almond (20% almonds) and Pistachio (18% pistachios) contain tree nuts. Chocolate contains dark chocolate (22%). All flavors contain wheat, eggs, and butter. -
What is the difference between biscotti and cantucci?
Cantucci is the Tuscan name for twice-baked cookies. The rest of Italy calls them biscotti, which just means twice cooked. Same thing, same region. -
Are these very hard?
Biscotti are intentionally firm. A 2-3 second dip softens the outside without losing structure. Eaten dry they are firm, not aggressive. -
