- Umbria's altitude and dry air are what durum wheat wants. The grain ripens slowly in the mountain climate, building the density that survives milling and drying. That flavor is still in the pasta when you cook it.
- Process
- The wheat is milled into semolina (semola di grano duro). The dough is extruded through a bronze die (trafila al bronzo) that cuts the ridged tube shape and leaves the surface rough. The ridges on penne rigate are functional: they hold sauce on the outside while the hollow center draws it in. No enrichment, no additives. Slow-dried on racks for 24 hours at low temperature.
