The soil is thin limestone, and the grow season stretches from late winter through spring.
Artichokes here grow large in the warmth, fed by cool-winter rains and dried under months of summer heat.

Process
The artichokes are cut young, while the leaves are still tender, then bottled whole in sunflower seed oil and extra virgin olive oil with parsley, garlic, chili pepper, and wine vinegar.
Sixty-five percent of the jar is artichoke.

How to use it
