The climate is hot and dry, and the olive harvest runs into late autumn.
The fruit concentrates in the heat before it is picked. - Process
- The olives are pitted and pressed with extra virgin olive oil, garlic, oregano, and wine vinegar into a coarse, dark spread.
Ninety percent of the jar is olive.

- We work with the family in Puglia that grows the olives and runs the pressing.
They have tended these groves for decades, and the pressing and bottling happen on the same land.

How to use it

How long does it keep once opened?
Refrigerate after opening. Cover the surface with a thin layer of olive oil. Use within 2 weeks. -
The flavor is very strong. Is that normal?
Yes. Ninety percent of the jar is olive. The flavor is concentrated and direct. A tablespoon per serving is the right amount. -
Is it salty?
It is seasoned with salt and wine vinegar. Strong but not overwhelmingly salty. Start with a small spoonful. -
Is it vegan?
