Puglia has cultivated olives on its plateau for centuries, and the trees here are old and deep-rooted.
The climate is hot and dry, and the olive harvest runs into late autumn.

The olives are pitted and pressed with extra virgin olive oil, garlic, oregano, and wine vinegar into a coarse, dark spread.
Ninety percent of the jar is olive.
