The climate is hot and dry, and the olive harvest runs into late autumn.

The olives are pitted and pressed with extra virgin olive oil, garlic, oregano, and wine vinegar into a coarse, dark spread.
Ninety percent of the jar is olive.

    Refrigerate after opening. Cover the surface with a thin layer of olive oil. Use within 2 weeks.
