Toscana's cantucci (biscotti) tradition runs on simple ingredients and precise technique. The dry climate and the twice-baking method built a structure that holds any mix-in well. Cranberry came into the range as the recipe expanded, but the foundation is unchanged.

Process
Cranberries are folded into the dough before shaping. The log is baked once, cut into individual pieces, then returned to the oven for the second bake. The cranberries soften in the first pass and hold their shape in the second, needing no additives to keep.
