- Sicilian hazelnuts grow on volcanic slopes where the soil is mineral-rich and the season swings between a wet winter and a bone-dry summer. That stress on the tree concentrates the nut. The hazelnuts that come out of this terrain are smaller than their counterparts from other Italian regions, and the flavor is more intense for it.
- Process
- The hazelnuts go in at 30% by weight, then stone-ground with extra virgin olive oil, sunflower oil, and a small amount of sugar. No palm oil. No cocoa to extend the color. The cream is pale and beige, not brown, because there is nothing in it masking the hazelnut. Vegetal fiber inulin gives it body without affecting the flavor. It separates over time in the jar: stir it, do not discard it.

- The family we work with in Sicilia has been producing nut pastes and spreads for decades, supplying local confectioners before shifting to finished consumer products. They grow and process on the same land. We visit once a year and taste from the current production batch before we commit to the order.
