Sicilia has grown almonds since ancient times. The island’s rocky valleys and long dry summers are exactly what the almond tree asks for: poor soil, strong sun, little water. Trees that grow in stress produce almonds with more concentrated flavor than those grown in irrigated, fertile ground.

Process
The almonds are harvested and sun-dried before cracking. The family processes them shortly after harvest, with no long storage between field and chopping. The result is a nut that is dry and even, not soft.

The family we work with in Sicilia has tended almond trees on the same land for generations. These trees are older than the people who tend them. We visit after the harvest and buy the season’s crop directly.

    Sliced almonds are thin flat rounds, slivered almonds are julienned lengthwise, and chopped almonds are diced into small even pieces. Chopped almonds give more texture and a stronger almond presence. They hold their shape better as a topping and go further in baked goods.
  • How long do they keep once opened?
    Almonds are among the more stable chopped nuts. Keep the lid tight and store away from heat and light. At room temperature: 4-5 months. In the refrigerator: up to 6 months. Rancid almonds smell like paint or cut grass.
