Delizia al Limone looks like one demanding pastry, but the better way to cook it is as four manageable components. Sponge domes, lemon cream, syrup, and glaze each have their own temperature and timing.
We keep the process orderly: bake and cool the sponge, chill the cream fully, soak with restraint, then glaze only when the domes are cold enough to hold their shape. That structure matters more than speed.

Heat the oven to 340 F. Butter and flour eight 3 in dome molds.
Whip the eggs, 1.4 oz yolks, and 3.2 oz sugar for 8 to 10 minutes, until thick and pale.
Sift in the flour and potato starch in two additions. Fold gently, then divide among the molds and bake 16 to 18 minutes, until the domes spring back.
Cool the sponge domes for 10 minutes in the molds, then unmold and cool completely on a rack.
For the lemon cream, heat the milk with half the lemon zest until steaming. Whisk 2 oz sugar with 3 tbsp cornstarch and 2 oz yolks, then temper with the hot milk.
Cook the cream over medium heat, whisking constantly, until it thickens and bubbles for 30 seconds. Off heat, whisk in 2 tbsp plus 2 tsp lemon juice and the butter.
Transfer the cream to a shallow container, cover the surface, and chill to 40 F before folding in 1 cup softly whipped cream.
Make the syrup by simmering water, 3 tbsp sugar, and the remaining lemon zest for 2 minutes. Cool, then add the optional lemon liqueur.
Hollow a small pocket from the base of each cooled dome. Brush lightly with syrup, fill with lemon cream, and close with the trimmed sponge.
Chill the filled domes at least 2 hours, or overnight, until firm and cold.
For the glaze, loosen the remaining lemon cream with 1 1/4 cups softly whipped cream and 1/3 cup lemon juice until pourable but not thin.
Set the domes on a rack over a tray. Spoon glaze over each one, chill 30 minutes, then move to plates.
