Granita looks simple until the freezer gets involved. Too little sugar gives you a hard block. Too much gives you syrup that never firms. The useful middle is a lemon syrup that freezes slowly enough to scrape into small crystals.

We keep this version Sicilian in spirit: fresh lemon juice, water, sugar, and patience. No machine is needed. The texture comes from scraping early, then scraping again before the ice has a chance to lock into one sheet.

  1. Combine 2 cups water, 7 oz sugar, and a pinch of salt in a small saucepan. Warm over medium heat for about 5 minutes, stirring until the syrup turns clear and no grains scrape against the spoon.
  2. Remove the syrup from the heat and cool for 10 minutes. Stir in 1 cup strained lemon juice and taste: it should be bright, sweet, and slightly stronger than lemonade.
  3. Pour the mixture into a shallow metal pan so the liquid sits no deeper than 3/4 in. Freeze for 45 minutes.
  4. Scrape the icy edges into the softer center with a fork. Freeze for another 30 minutes, then scrape again.
  5. Repeat the 30-minute freeze and scrape cycle 3 to 4 more times, until the mixture is made of small, loose crystals instead of slush.
  6. Cover and freeze for at least 2 hours after the final scrape. Before serving, let the granita stand at room temperature for 5 minutes, then rake it with a fork until fluffy.
  7. Serve in chilled glasses. Brioche is a good serving note, but the granita should stand on its own.
  8. For variations, replace the lemon juice with strong chilled coffee, strained orange juice, or pureed berries, keeping the total liquid and sugar ratio the same.

If the granita freezes into a sheet, it is not ruined. Let it soften for 8 to 10 minutes, break it up with a fork, and scrape again before serving.
